How Do You Cook A Pig Underground?

    In Hawaii, the pig was roasted traditionally in an underground oven. You do not have to worry if you do not have an underground over. I will tell you how to make one, all you need is a backyard and a shovel and of course a pig carcass. The entire pig can be cooked or roasted underground in a closed pit.

    You need to dig a hole 3 feet deep, 30 inches wide and of appropriate length to fit in the whole pig. Start a wood fire in the pit and build it up. Use wood at least 2 times the volume of the pit. The wood will require 3-4 hours to burn completely. You should use only dry hard wood. When you have sufficient coal, level them and remove unburned pieces. Cover the coal with 2-inch layer of pea gravel and place a 2" by 4" sheet of welded wire on top of it, the pig should be placed on top of the welded wire. Lower the pig into the pit and cover it with electrified roofing supported on steel posts or pipes. Put the dirt over it to cover. Allow the pig to cook for about 10-12 hours.
