Wow, I didn't think there were any 41 year old females that were into dating. I have to ask a question up front, where does a guy like me find someone like you? (that is, someone who is dating).
Sounds like this guy wants to find out more about you and what your likes are. He is considerate and is willing to risk his own interests to see if he may also enjoy yours. I would take him to get a coffee (that is if it is what your into) and maybe check out a holiday display. Bottom line, do something that you would enjoy doing with a friend. Then let them build from there.

Try to find out if there is something you both mutually like - food, if he likes to go out dancing, movies, museums, concerts? Or just suggest what you really like doing and if he hesitates, ask for his input on something you can do fun for the both of you so it won't spoil you time together. I would suggest a quiet place to have dinner, somewhere you can hear each other talk. This is also a good time to check out the holiday displays, etc. Frankly, I think you are lucky to have found someone who is age-mature. Sounds like he's being considerate at the least.
