There are two main principles to cooking a perfect steak. The first is to buy the best meat you can afford. The second is to give the steak lots of heat !
Fillet steak is usually the best quality steak, but if you cannot afford fillet steak, buy sirloin or top rump.
Prior to cooking the steak take it out of the fridge for 15 minutes before you are going to cook it. This brings up the temperature of the meat and so it won't be so shocked by being cooked.
Place around two teaspoons of good quality vegetable oil into a frying pan and heat it till it smokes. Then pop in the steaks. Do not move the steaks in the pan, or you will lose the heat. If you want the steaks medium allow 2.5 minutes each side. If rare, slightly less, if well done, slightly more. Then place the steak on a warmed plate and place it in a very low oven for 10 minutes. This allows the meat to recover and rest, having been cooked. Delicious!
