1. Decide which cake you are going to make.
2. Check you have all the ingredients and tins, bowls, spoons etc required.
3. Get out all the ingredients and measure them carefully following the recipe exactly.
4. Switch on the oven to the correct temperature making sure the shelf is in the right position for the cake.
5. Prepare the tin greased and floured as directed
5. Sieve, mix the ingredients as required.
6. Put the well blended mixture in the centre of the tin and allow to run out equally to the edges.
7. Put the cake gently into the oven.
8. Time the cake.
9. Test the cake is done - with a sponge this can be done with a gentle finger making sure the mixture comes up when pressed, or a skewer stuck into the centre of the cake which should come up clean. If it fails these two tests allow to cook slightly longer.
10. Turn on mesh tray to allow to cool.
11. If the cake requires butter icing or further decoration do this when the cake is absolutely cold.
12. Enjoy!
