You just have to keep to doing Grand Prix's here's a list of how to unlock everything:
King Boo-win 50cc star cup
Baby Luigi-Win 8 expert staff ghosts data
Baby Daisy-Get at least 1 star ranking in every 50cc cup
Birdo-Do 16 courses in time trial mode
Bowser Jr.-Get 1 star in all the 100cc grand prix
Daisy-Get 1st place or better in 150cc special cup
Diddy Kong-Finish first place or better in the 50cc Lightning cup
Dry Bones-Finish 1st place or better in the 150cc Leaf cup
Dry Bowser-Score star or higher in every course, on every grand prix
Funky Kong- Unlock 4 expert staff ghost datas
Rosalina-Score 1 star or higher in Mirror Mode Courses
Toadette-complete all courses in time trial mode
For the tracks I recommend trying to finish in 1st place or better on every 50cc grand prix and 100cc, when you finish first on lots of them you can for example: Play lightning on 150cc cup.
