Ghee is extensively used in Indian cooking. A good quality of ghee adds an enhanced aroma and flavour in food. Ghee can be taken with plain rice also. Ghee has a high burning point, and hence it is not smoked very easily, allowing its cook to add in variety of dishes at varying degree of heat. As Indian food uses good amount of oil in almost every dishes and also they are usually made spicy, so ghee is always a better substitute of plain cooking oil as with its thickened structure, it helps to make a spicy yummy thick gravy very easily.
