    One of the most beloved herbs of modern and ancient times is Chamomile.  With no known toxicity, it is impossible to overuse it, and its ability to gently relax the mind and body, stimulate the apetite, and calm collicky babies has endeared it to mothers for centuries.

    Chamomile flowers are antispasmodic, anodyne, calmative, carminative, diaphoretic, and tonic.  The parts used are the flowers, which are small and pleasantly yellow, tasting mildly of apple.

    Although some people display allergic reactions to this herb, for the most part, adults and children can take it regularly to assist with digestive complaints, insomnia, anxiety, and weak appetite.  

    The flowers can be eaten fresh, right off the plant, but the favored way of ingesting chamomile is to make a tea (infusion) of it with boiling water, steeped for 5 minutes.  The taste is quite pleasant, and it can even be put safely into a baby's bottle to help them sleep when colicky or teething.  

    Chamomile is also quite effective in sleep pillows and bath blends, and it is delicious when used to flavor honey.
