    Wash well and cut off the leaves leaving a good inch above and put in boiling water until soft.  Do not add salt as this will toughen them. Timing will depend on the size of the beetroot.  Allow to cool and peel immediately.

      You could also  scrub them well..unpeeled..leave about an inch of the stem cover them up in aluminum foil..put in a oven at 350 F for about an hour..let them cool and peel the skin off ,it will come off very easily.
