A charlotte is a type of a dessert item that consists of a mould that may be lined with bread or sponge cake, sometimes even ladyfingers. The inside of the mould may consist of a variety of stuffing, like fruits or custard, sometimes just plain whipped cream.

The conventional mould is in the shape of a pail, but a mould of any other shape is fine. The bread or cake lined mould is stuffed with layers or blends of custard, fruit etc and whipped cream which has gelatine added to it. It is then frozen and taken out of the mould just before eating.

Charlotte russe, a variation of the charlotte, is told to have been made for a Russian Tsar named Alexander. This particular variation has a ladyfinger lining stuffed with delicate Bavarian cream and embellished with little whipped cream roses.

Another variation, the apple charlotte consists of herbed, sautéed apple. This kind of a charlotte is baked in an oven and served piping hot, unlike the traditional charlotte.
