How Can I Make Turkish Coffee?

Answer Question

Turkish coffee, called Qaweh, or "the wine of Araby," is delicious and easy to make.  Be certain to cook it in a brass pot for authenticity.  Cooking in pots made of other substances alters the taste.

Purchase Turkish coffee beans at a speciality retailer.  Turkish beans are roasted by the manufacturer until almost burnt, and then crushed or ground.  Take 1 teaspoon of sugar, 2 tablespoons of Turkish coffee, and 2 cardamom pods.  Boil 2 cups of water in a brass pot, add the sugar, then sprinkle in the coffee.  Stir this and allow to boil and become frothy.  Add the cardamom and remove the mixture from the stove.  When the froth subsides, return the coffee to the stove and boil it again.  Repeat this 3 more times, being certain to remove the pot from the heat before it boils over.  Strain the solids out.  The froth should be spooned into demitasse cups before adding the coffee to serve it.
