What In Pastry-making Does 'Relax' Mean?

    'Relax' means to set the pastry aside in a cool place after rolling. This allows the gluten to contract as it will expanded during rolling. This will prevent the pastry from shrinking in the oven. The pastry is usually wrapped in plastic and refrigerated for 30 minutes.

    'Relax' is also a term used when referring to batter mixes. This is similar to the pastry as the batter is set aside to allow starch cells to swell, resulting in a lighter colour when cooked.
