Saffron rolls are a citrus based dish that is usually eaten for breakfast. To prepare saffron rolls all your require is 1 tsp. saffron, ¼ cup hot water, 1 cup milk or buttermilk, ¼ cup margarine or butter, 1 tbsp. lemon rind, grated, 1 tbsp. active dry yeast, ¼ cup sugar, 2-1/2 to 2-3/4 cup all-purpose flour and ¼ cup potato flour.
First place the saffron in hot water for approximately 10 to 15 minutes. On the other hand mix together milk and margarine in a saucepan and heat till the margarine is melted. Cool it and then add some lemon rind. Sprinkle some yeast in the mixture of milk when it is lukewarm. Keep it aside for 5 minutes. Now add 2 cups of flour and potato flour along with the saffron mixture. Beat the entire mixture till it is smooth. Add in one more ½ cup flour and Mix it carefully.
Place in bowl sprayed with food preparation spray and wrap with a moist towel and allow rise in a temperate place until doubled in size. Then knead on a lightly-floured board till it becomes smooth. Now cut it into 18 pieces and place them in the muffin cups. Bake it at approximately 350°F oven for about 18-20 minutes until golden brown.
