What's A Good Double Baked Potato Recipe?

Bake and cool the potato until you can stand to touch it, or can work with it with a pot holder, or towel.
Carve a crater into the center of the potato, and skin the portion you remove if you like. Mash potatoes, add butter, a little milk, broccoli tips, diced mushrooms, garlic, pepper, parsley, and a small amount of sour cream. Mix well, and put back into potato, bake until heated through, then top with grated cheddar, and melt over potato, serve hot. Hope this helps.
