She is the 'American Dream' princess. It is the same reason supermodels are mostly blonde because universally women recognise Blonde as beautiful. I personally prefer dyed black hair.

Barbie has blonde hair because, blonde is more associated with a female, as boys Are more darker shades as you will notice ken also has brown hair. Its just one of them things.
