Most people in the United States buy crabs that is pre-cooked and then frozen. If you don't want to eat frozen crabs then the crab must be cooked live. This has to be done because a dead crab turns inedible very quickly.
The live crab should be tossed into boiling water; this will not only kill the crab but also begin the cooking process. There are some cooks who prefer to add either 1 tablespoon salt or 1 tablespoon vinegar to the water. Next, scrape out the gills that are found under flaps just over the legs. Pull off the 'apron' from the crab's underbelly. The amount of time that the crab has to spend in boiling water would depend on the species. After boiling, it is ready to be cooked.
Melt some butter in a pot, blend it in flour and add seasonings. Now mix cream with this and stir until a thick broth is formed. Add egg yolk to the broth. Now add the crab legs to it. Crab legs can either be grilled, baked or steamed. They can be cooked with avocado, tomatoes and onions. 2 to 3 legs should be sufficient per person.
