Elderflower is used as an herb as it is found beneficial in coping with various ailments. Elderflower can be taken through hot infusion (a process in which water and elderflowers are brought to a boil and the steam inhaled under a canopy of a towel or blanket). In this manner they benefit infections such as colds, tonsillitis, flu and laryngitis, all being infections affecting the upper respiratory tract. It cleanses the body of toxins through perspiration. It is used in fevers to bring down temperature too. It is beneficial to patients of gout, arthritis, chickenpox, hay fever and measles.
A simple summer drink made from elderflower:
20 elderflower heads;
2 1/2 pints boiling water.
2tsp citric acid;
3 1/2lb sugar;
1 lemon (sliced);
Mix all the ingredients in boiling water and stir till sugar dissolves. It has to be left covered up for 4 days to ferment, and should be stirred a couple of times each day. It can then be used by mixing in water, dash of lime and soda water. It has a shelf life of 2 weeks when refrigerated.
