Thank you all for the answers and please share any more advice you might come up with.  To clarify there's not anything mentally wrong with her, it's not a health thing, it's legitimate situations around her that are causing this. I know some of them, but not many.

Could you add a small plant to your play area in a garden pot or something. Maybe have the same kind of plant at different stages of growth in other pots lined up. Or possibly have a tub of water and multiple objects for them to experiment with to learn about floating and sinking.
