Here in America which careers do you feel are the most underpaid and the most overpaid? I will give my opinion with an answer to my own question.

I'm definitely in agreement that teachers are massively underpaid and actors/athletes/celebrities overpaid.  Also, hedge fund managers.  I saw a statistic today that showed the top 25 hedge fund managers made more combined than the combined salaries of over 400,000 teachers.
