Do souls have a gender and a race? If they have a species (and from what I understand, they do), then wouldn't they also have at least a gender too if not a race as well?

Depends what you mean by soul. If you think of it as the basic essence of the individual -- the personality, the unique interests, the morality, the sense of identity -- then, yes, a soul would have the gender of the body it was walking around in.
