Lettuce produces three times the Greenhouse gasses than bacon does but in reality, that's the only thing. Read this article as it's pretty interesting.

Is it true that growing lettuce is worse for the environment than producing bacon?

So they say.  Besides the emissions a lettuce apparently requires many more negative environment empacting resources than raising a pig.  Many crops are tge same.  Peanuts for instance absolutely decimate the soil and many resources have to be used just to get the soil back to usable state.
