I'd like to achieve a ( dark and light ) checkered board like pattern on my lawn using grass seed. How can I achieve that?

Yes rooster has it right that is how baseball and golf courses do it. I worked on golf course equipment for city of austin for a year another trick they did was to raise the mowing deck on one cut then lower it on the next cut giving the checkerboard look

I couldn't find anything about different seeds to use but just these videos on how to cut your lawn to look like it.

What kind of grass grows in your area ? Here its st.augustine looks great if you have it fertilized and not too much water.

Mostly fescues, Kentucky Blue Grass and Zoisa.
