For more on brakes (with pictures) look here: auto.howstuffworks.com Your problem is that if you go to a brake shop they will probably tell you that you need new rotors even if the old ones are in perfect condition. Maybe they are trying to get more money out of you maybe not. The only sure way to do a good (and safe) brake job is to have either new rotors or cut the old ones. That being said I rarely do this. As long as I replace the pads before they get to the metal I leave the rotors alone. Just me being cheap.
