I have a sensitivity on coconut as well! In some period of time, due reasons i ate coconut cakes everyday for like half a month! Since then my senses are so sensitive anything related to coconut.

I usually do not like Pina Colada's. BUT one of the best drinks I've ever had was a Pina Colada, at the Ritz Carlton. It can't be at the bar, it has to be poolside. To this day, I will go to the Ritz Carlton in Laguna Nigel specifically to have a Pina Colada poolside. They must be that good if I'm willing to go there ONLY for that. I highly recommend them.
