I have many too many courgettes (Zucchinis to those of you living in the USA) Any idea how to use them? (for food purposes folks, keep it clean.)

I slice them about 15mm thick, coat them with olive oil and cook them on the grill. After cooking one side, I flip them over and put a slice of tomato, some cheese and a sprinkle of Italian flavored bread crumbs and continue cooking until they are nice and tender.

I have a few neighbors with gardens and they all grow those giant zucchinis and I always get at least one a week. Both zucchini and eggplant are good breaded and fried too.

I love zucchini!!! I just recently had some as a pizza topping.... DELICIOUS!!!!!!

Or you can cut it up and put it in a dish with potatoes, red and green bell peppers, onions, a little vegetable oil, garlic salt, parsley flakes, grated cheese with or without cut up green beans and or asparagus. 350 for about 45 mins then add some parmesan cheese mixed around and sprinkle some more cheese on top. Put it back in for another 10 mins. ☺

Or there is the old way we use to eat it... Cut in a small pot boiled with water about 10-15 mins (I think... Till soft) drained then add butter and seasoned salt. Stir and serve.

If you ever get ahold of a big zucchini, slice it lengthwise, scoop out the seeds (making a trough) fill the halves with ground Italian sausage, cover with cheese and bake.

My husband might like that! I am not a meat kind of person but it sounds simple enough! Even for ME!!!! Lol!

Since my hubby has been diagnosed with diabetes, we have gone low carb. You can slice them long ways and use them in place of lasagna noodles. Or what I often do is split in half long ways and put on a light coat of butter and sprinkle with garlic salt, and then grill.
