If I were to pick only one, however, it would be a marvelous Norwegian Jarlsberg.

American. And for my nachos I prefer Velveeta. And yes, I know it is not really cheese, but a cheese flavored artificial food prodict.
Cooper Sharp American Cheese is my favorite but I also like American and Swiss too.

I use american slices or swiss cheese (generic is better actually) LOL!
I mix whatever is in my fridge. Usually Swiss, provolone, and either American or cheddar.
i like to use marble cheddar but regular pre sliced cheese works ok.

I just made a delicious one on Saturday . . .
I took Multigrain bread (Hearty bread), added a slice of American, Sharp Cheddar, and smoke Gouda. Sliced thin tomatoes and bacon in it as well . . . Buttered both sides and grilled to crispy perfection . . . Ate that with a dill pickle and side of Butternut squash soup.
